Mermaid Bison Burgers

INGREDIENTS

  • 3 100% grass-fed Bison Burger Patties
  • Salt
  • Coarse Ground Black Pepper
  • Ground double superfine mustard
  • Onion Powder
  • Paprika
  • Garlic Powder
  • Red Pepper (optional if you want to add some kick to it)

TOPPINGS

  • Cabbage leaves
  • 6 Avocado slices
  • 3 Tomato slices
  • Green sprouts
  • ½ Yellow onion sliced
  • 4 Figs
  • 2 Roasted Garlic cloves minced
  • Balsamic vinegar
  • 1 teaspoon Olive oil
  • 1 or 2 sliced jalapeños

COOKING INSTRUCTIONS

Preheat your grill to approximately 500 degrees. While you wait, season your Bison Burgers by lightly sprinkling the seasonings of your preference. 

Heat skillet to medium-high with a bit of olive oil. Sauté onion and sliced jalapeño (remove seed if you do not want it too spicy) until translucent, soft, and yellow. Add in minced roasted garlic until slightly brown. Add in sliced figs and turn up the heat to high. Splash in some balsamic vinegar, let the onions and figs sear, and flip to brown the other side. Once everything is caramel colored and seared, turn off the burner and remove from heat.

Place your Bison Burgers over direct heat for 2:30 minutes per side. Close the lid while you cook them. Remove your bison burgers from the grill and let them rest for 5 minutes before you serve them.

Assemble your burger by placing your burger on top of a cabbage leaf, then add the sauté onion, jalapeño, figs, avocado and tomato slices, and green sprouts.
