One day before you plan to cook, take your bison out of the freezer and place it inside your refrigerator. I recommend putting your bison on top of a plate in case the package leaks.
Pat your bison steaks dry.
Preheat your grill to approximately 500 degrees. While you wait, season your bison steaks by lightly brushing some avocado oil and sprinkling salt and black cracked pepper on both sides.
Place your steaks over direct heat for 2 minutes per side. Close the lid while you cook them. Remove them from direct heat and continue cooking over indirect heat, 500 degrees for 5 minutes. Remove your steaks and let rest for 5 minutes before you serve them.
